So I have continued to state that I am definitely not much of a cook! However, whenever I come across a great recipe I feel compelled to share it with my fellow mamas. This recipe is one of those great ones, and by great I mean easy AND delicious.
When we returned from our five-day stay in Mexico, one would think I would have had enough Mexican food. Quite the opposite! I enjoyed the spicy, flavorful dishes so much I wanted more. In fact, I was determined to make myself some pork carnitas even though I had NEVER made this dish before in my life. Enter the magic of Pinterest, and fellow bloggers, and I quickly had an easy, instant pot recipe for pork carnitas!
I am sharing this both because it was delicious, and because it is an easy meal that’s would be great for parties or guests. I adapted this recipe from Will Cook for Smiles – and it can be found here.
The only thing I did different was add some Lowrys Seasoned Salt and red pepper flakes when browning the meat, because I like things salty and spicy! Other than that I followed the recipe to a T and it was delicious!
I served the pork carnitas over rice, with cheese, salsa and guacamole for myself. For my husband, I used the broiler and crisped some flour tortillas, carnitas and cheese. Both ways were a big hit, and this was a delicious and easy dinner recipe! Add some avocado, salsa and cheese to this and you have a winner!
